Champagne is a type of sparkling wine that generally comes from the Champagne appellations of France. In the US champagne is often used to refer to any sparkling wine. However, in the EU, it is only used to refer to sparkling wine that comes from that specific region in France.
Champagne and other sparkling wines get their bubbles and fizz from carbon dioxide. There are two primary ways of creating a sparkling wine. It can be created using natural fermentation in a pressurized bottle or tank as well as a carbon dioxide injection which is often the more cost effective and precise method.
