Pinot Grigio or Pinot Gris is a white wine varietal grown from grayish-blue grapes. These grapes produce deep golden yellow to copper colors and can even be produced as a very light shade of pink. It gets its' name due to the nature of how the grapes grow on the vine and are often thought to be a mutation of the Pinot Noir grape. The harvest of these grapes are done early to retain the acidity and to not create a wine that is over-bearing in its' fruitiness. Pinot Grigio's origins can be traced back to the middle ages in the Burgundy, France region and has been grown ever since.
In Italy, this wine is often lighter and produces a rich fruity flavor which will pair well with lighter dishes such as Fish or Chicken. The Pinot Gris from Alsace are often rich in texture and has notes of honey which pairs well with pork and other cured meats.
