The winery ferments the juice for three weeks in temperature-controlled tanks, avoids malolactic fermentation, then cold-stabilizes, filters, and rests the wine on light lees for two months to maintain freshness.
Carletto presents this as a dry, characterful white with a clean, focused aroma, a golden-apple finish, and a fresh, well-balanced palate that lingers. It is an easy partner for fish, seasonal pasta, and chicken, while its bright style also works well as a chilled aperitif.
