After harvest at optimal ripeness, the fruit was gently destemmed and cool fermented in stainless steel to retain aromatic freshness. Time on full and fine lees builds complexity and texture before blending and bottling, giving the 2025 release enough structure for seafood while preserving its energetic fruit.
