The epitome of Paso Robles Cabernet Sauvignon: San Simeon. On the nose, you encounter the unmistakable notes of San Simeon's unique selection of French and American oak barrels with aromas of baking spices and vanilla intermingling with notes of ripe dark fruits. On the palate, you will be greeted with notes of blackberry and ripe plum, followed by touches of cocoa and warm spices, and a long finish underpinned by fine-grained tannins and solid acidity.

Jeb Dunnuck Review - Rated 90:
Based on 80% Cabernet Sauvignon and 20% Petit Verdot, aged 18 months in 60% new French and American barrels, the 2023 Cabernet Sauvignon shows classic Cabernet character in its darker currants, sappy herbs, tobacco, and freshly sharpened pencil aromas and flavors. It's juicy, medium to full-bodied, has ripe tannins, and terrific overall length. This rock-solid 2023 has tons to love and should have a decade or more of longevity. Drink 2025-2035.
